HAPPY BIRTHDAY, HELEN!! HAVE A PURRFECT DAY!
Day 80 – Yikes, 27 degrees this morning; guess winter is not over. Nice & sunny out though, and the wind had died down. We met Pam at her house after she got home from work & visited a bit with the dogs. Before that, Rob & I went to the used bookstore, Half Price Books, in Louisville. We traded in some books we’d read this past year and walked out with 4 more bags of books for the coming year.

We grabbed a dog, Jenji, and hopped in the car to go out for Mexican food. (Well, they all hopped in the car; I hobbled with my cane to the car, LOL.) We went back to El Mundo again. It was excellent, as always. We aren’t in a rut; we all like the restaurant that much. We go several times when we are here. They have a different special everyday – Monday’s are $4 house Margaritas, $3 Tortilla Chips & Chipotle Chili Dip appetizers, and their Grande Burrito dinner is $6 (a burrito the size of a plate with choice of filling). Rob & I LOVE their Mosquito, a Margarita with Jalapenos, Lime, and Agave so we got those; Pam got the special Margarita. We split the special Chip & Chili Dip & shared an order of the Nacho appetizer. I got a cup of the soup of the day, Grilled Onion, Garlic, & Poblano Chili Cream Soup (outstanding). Pam got the special Grande Burrito stuffed with Rice, Black Beans, Cotija Cheese, Sour Cream, Corn, Tomatoes, Tomatillo Chile Salsa, and Roasted Vegetables. Rob & I split the Southwestern Corn & Roasted Red Pepper Enchiladas and the Mole Enchiladas filled with Cheese & Onions. Then as if that wasn’t enough, we all shared a piece of Avocado Cheesecake. So, have I made anyone hungry yet? I should’ve taken pictures of the food but didn’t think of it; too busy eating.
We’ll all need to get back to our regular healthy eating soon! We rolled out of the restaurant, dropped Pam & Jenji off at their house, and drove back to the RV. We didn’t get to sleep until midnight, we were so full. The high today was a comfortable 52 degrees, with sun & low wind.
